why or when should i install su and farmaroot?

well at first i stuck to the adb method , and i found it covering everything needed (unlock boatloader, flash recovery)
then why everyone talking about su and farmaroot?!!!
i must be missing something
also there is many tool like mtkdroid and flashtool
i am wondering why all this while adb is simple and easy
what am i missing?
